My Shiny New Toy

This past week, Nuno & I went out and bought our very first kitchen stove.  The one we owned previously, was used and given to us by a friend a few years ago, when we still lived in our first apartment.  It was a white, coil top electric range and was still in good shape, but I had been wanting to purchase a new stove, for quite some time.  At first, I wanted a gas range, but then decided against it, after weighing the pros and cons of owning a gas oven.  I opted for a new stainless steel smooth top range with convection oven. The glass top is smooth and so easy to clean and the convection baking seemed like the best way to go!  I'm certainly loving the new buttons and gadgets!  And I have 3 racks!  I only had one rack in the last oven! Can you believe it?!

This is the first thing I cooked on the range - corn on the cob & sweet potato fries.

On Saturday, I made pesto sauce for a pasta side dish.  It is so easy to make!  All you need is 2 cups of fresh basil leaves (from my herb garden), olive oil, minced garlic, grated Parmesan cheese, pine nuts, and a little salt and pepper.

Throw it all into the food processor and pulse until it is smooth. 



This was our dinner on Saturday night - grilled pork and pesto pasta!  


Sunday, I wanted to experiment with the new convection bake mode in my oven.  So, I decided to bake some brownies.  I adapted a recipe from the book Baked, by Matt Lewis and Renato Poliafito.  I played around with the recipe and made a few changes here and there.


Buttered a 9x13 inch glass baking dish


Melted semi-sweet chocolate chips and butter in a glass bowl over a pan of simmering water.  Contrary to the authors' brownie wisdom, I DID add a teaspoon of baking powder and found that it gave the brownies a little height, but did NOT make them "cakey" in the least.


The brownies are baked to perfection and cooling on a wire rack


Here they are - chocolatey, rich, moist and chewy!  And perfect with a tall glass of milk!

As you can imagine, I get pretty sick of brownies...but I would (almost) KILL for one of yours right now, they look SO good Rosinda! & pesto is one of my very favourite things too...yummy! Love the new stove. I got my pride and joy a few years ago...I have my perfect combination of gas hob & electric oven. You are going to get so much pleasure & enjoyment from baking & creating wonderful family meals over the years to come! Lovely post xoxo Rachel

  4. I have oven envy, lol! Beautiful new stove will assist you in making many wonderful meals. With your talent for baking and cooking it's a must to have a good oven and stove top. Know you will enjoy it for many years.
    The brownies look sooo perfect, the combination of chewiness inside and a little crackingly crispness on top.

Oh, the brownies look sinfully rich---you can SEE the moistness of them Rosinda---and I LOVE the new stove---a great stove is essential and now you'll be even more inspired to bake and cook yummy things!   6. I'm with Sandy in terms of the oven envy. That's a gorgeous stove and I know you will enjoy cooking even more because of it. Convection ovens are fantastic. Brownies looked to die for! You can see in the pic how they'd melt in your mouth. I melt choc in the microwave by the way. Seems easier to me.

    Re the pesto, that looks like way too much oil and too little basil since it wasn't pressed into the measuring cup. You might try halfing the oil and using some of the water from the cooked pasta to thin the sauce a little. Just a suggestion. I'm sure the way you made it was phenomenal; I just prefer things will less oil if that will do. I remember making pesto that was so thick the pasta was really green and coated, but using some pasta water made it more like the way restaurant chefs do it. Anyway I know it was all yummy beyond compare.

    I used 3/4 cup of extra virgin olive oil and found it to be the perfect amount for the 2 cups of basil. Some people prefer the sauce thicker and others lighter. It's all a matter of preference, I guess. Thanks for always taking time to leave a comment! xo

  8. Congratulations on your new stove, Rosinda! I remember how excited I was when I got my first brand new stove. We were living in Japan and it was tiny by American standards -- not nearly so cool as yours -- but oh the thrill :) I hope we'll be seeing a lot of your new stove in upcoming blog posts. It's going to turn out delicious food for many years to come!
