Today, I want to share with you, my recipe for baked eggs. This is a favorite dish I like to prepare for my lunch. Not only is it healthy; it is delicious, filling and always looks so darn pretty!
Ingredients:
butter for greasing dish
1 tbsp table cream (10% m.f)
2 or 3 kale leaves; rinsed, chopped, stems removed
6 slices of pepperoni or chorizo
2 large eggs
salt
fresh ground black pepper
fresh thyme (optional)
* keep in mind that the kale leaves may seem like a lot, but they will wilt and shrink while baking
*you can replace the kale with spinach leaves if you prefer; both are delicious!
Directions:
- Preheat oven to 375 degrees Fahrenheit
- Grease inside of a small 5 inch oven-safe dish (square or round) with butter
- Add 1 tablespoon of cream to bottom of dish
- Place chopped kale leaves over top (sprinkle with salt & pepper if you wish)
- Add sliced pepperoni or chorizo
- Gently crack both eggs on top
- Sprinkle with salt and pepper and thyme, if so desired
- Place your dish onto the middle rack of your preheated oven
- Bake for 20 minutes if you prefer your yolks firm. If you like them a little runny, 15 minutes should do the trick.
Remove your dish from the oven and let it cool for a couple of minutes before you dig in.
You can remove the baked eggs onto a plate, but I prefer to eat mine right from the dish!

Hi sweetie! Ok, confession time...I absolutely loathe eggs!! Whole eggs that is, I don't mind them as an ingredient. So this one isn't for me...but it's beautifully photographed as usual and I would love to have kale, chorizo & onion!! Happy Tuesday, lovely to see you posting xoxo
ReplyDeleteI always loved eggs in every form tho I always liked the whites more. Lately the yolks don't appeal to me any more and I want only the whites and am so happy with those whites in cartons, the idea of which seemed icky til I tried it--they're great. I used to order a baked eggs with spinach and 4 cheeses at an Italian place in NYC (ricotta, parm, mozz 1 other). These look beautiful tho I really don't eat pepperoni. Once my mother told me that as a kid her widowed mother worked and so my mother decided to surprise her with dinner. A cookbook gave her the idea to hollow out some tomatoes and fill with cracked eggs and bake. She was so proud to say her mom said it was the best dinner she ever ate. She was like 85 when she told me this story so it stuck with her forever. I wonder if you would like baking eggs inside tomatoes!
ReplyDeleteThis is so lovely and so healthy, too---full of vitamins, good fats, YUM!! Oh my goodness; I would probably use a turkey product only because I have a few non beef-eaters, but the rest is yummy..... Thank you for being so generous in sharing your recipe!
